I haven't really played since the level cap was 59 but I don't think this would have changed that much. Don't put any stat. points into END, buy equips that have it as a stat if you really want it and get it enhanced as high as you can get/afford. Defense scrolls work wonders too.
Also, just party with a Tank and Cleric who know what they're doing, you'll never get damaged that way.
