Q about STR

i was wondering about how does builds affects my character:
i heard that STR adds 1.2 dmg that ignores targets def, say a character have 5 STR shouldn't deal less than 6 dmg (5*1.2=6). then how come i saw this video that had fighters that were fighting a holy knight and they dealed 1 dmg although i'm sure the have some STR

When they say STR adds 1.2 dmg which ignores defense that is for the free stats you add every level. STR from equipment does not count.

So unless you saw in their stat window that they had STR bonus added in then... I guess whatever that person was attacking had more defense than he can deal. There is also the fact that some mobs ignore all the games "rules" and only allow 1 dmg to be dealt no matter... but as I cannot see the video I wouldn't know.
